Ingredients:
4 egg whites
1 whole Ezekiel English muffin
1/4 cup canned crushed tomatoes
Dash Italian seasoning, or more to taste
2 tbsp. finely chopped onion
2 tbsp. finely chopped red bell pepper
Directions:
-Spray Tupperware with non stick spray and add all the above ingredients.
-Place in the microwave for 3 minutes, watching carefully as the eggs can explode if you are not careful.
-while eggs are cooking, place English muffin in toaster and toast.
-Continue watching eggs and cook until completely cooked all the way through. After the 3 minutes, remove from microwave, pierce them with a fork and place them back in the microwave until cooked…
Once fully cooked, remove from microwave and simply remove from container (turn upside down over English muffin) and place on English muffin.
Enjoy as a sandwich…. 🙂
