Ingredients:
2 cups egg whites
1/2 c. non fat cottage cheese
1/2 cup chopped tomatoes
1/2 cup red and green bell peppers
1/2 cup sweet or purple onion
1/2 c. non fat refried black beans
1/2 c. non fat cheddar or jack cheese (optional)
4 Ezekiel grain or whole wheat tortillas
Ground Pepper
PAM (cooking spray)

Prep:
-Preheat oven to 250F and place tortilas in oven to warm, while preparing other ingredients

-In small bowl, mix eg whites, cottage cheese, and pepper.

-In a medium skillet spray PAM, saute vegetables and beans until soft. Pour egg white/cottage cheese mixture over veggies and cook intil mixture sets. Once firm, divide egg mixture evely among tortillas and roll into a burrito. Top off with your favorite Salsa and enjoy!
