Black Bean Brownies
Ingredients:
15 oz can black beans, drained
¾ cup no calorie natural sweetener such as baking Stevia
½ tsp baking powder
½ tsp baking soda
1 tsp vanilla extract
½ tsp sea salt
1-2 tbsp instant coffee, depending on how strong you want the flavor
(decaffeinated or DandyBlend is another alternative)
-4 tbsp unsweetened cocoa powder
-2-4 tbsp coconut oil OR sub oil for 1/4 cup unsweetened apple sauce
-5 egg whites
-1/2-3/4 cup walnuts, crushed
Directions:
Preheat oven to 350 degrees F. Blend all ingredients in blender or food processor. Pour into cooking dish sprayed with non-stick cooking spray or coated with coconut oil. Bake for 30 minutes or until fully cooked. Allow to sit in the oven for 5-10 minutes to settle and then remove. Allow to cool and cut into brownie squares. Tip: Have fun with these brownies, adding other ingredients to fit your taste buds. Add shredded coconut or even your favorite nut butter!
