Ingredients:
1 zucchini, diced
2 tomatoes, diced
1 yellow pepper, diced
1 small red onion, diced
¼ cup chopped cilantro
1 Tbsp. fresh lime juice
1 garlic clove, minced
black pepper– to taste
1 tsp. chili powder
4 (4 oz.) bison steaks
Instructions:
Combine first seven ingredients in a small bowl and Add pepper. Heat a large skillet over medium high heat. Sprinkle both sides of steak with chili powder. Cook for 2 to 2 1/2 minutes per side. Let stand for 5 minutes. Top with salsa. Enjoy!
