Baked Eggs

2 cups EggBeaters or egg whites
1/2 cup Cottage Cheese (fat-free)
1/2 Reduced Fat or NON fat Cheddar Cheese
Any kind of veggie** or you can do a mix of splenda and cinnamon for a sweeter taste

P R E P A R A T I O N

Preheat oven to 325 degrees. Mix Eggs (beaters or whites) and cottage cheese until smooth with a blender or mixer. Stir in 1/2 cup of finely greated cheese and veggies/or cinnamon splenda. Spray a muffin tin wiht PAM. Fill muffin cups with approximately 1/4 cup of mixture. Bake for 18-20 minutes. Serve 2 EggBeater muffins with a slice of whole wheat toast. Refrigerate remaining. Microwave for 30-45 seconds to reheat. *Makes 12 servings using a standard muffin tin.
