Ingredients:
1/2 cup cooked brown rice
2 tbsp. salsa of your choice
1 tbsp. chopped fresh cilantro
2 tbsp fresh lime juice
4 oz. raw boneless skinless lean chicken breast, cut into small strips
1/2 cup chopped red & green bell peppers
1/4 cup chopped onion
1/2 c. finely chopped Jicima
1/4 cup canned black beans, drained and rinsed
Directions:
Bring a pan sprayed with nonstick spray to medium-high heat. Add all ingredients except jicima, black beans and salsa.  Cook, sauteing occasionally, until chicken is cooked through and veggies are tender. Remove from heat and add in black beans and fresh sliced jicima. Top off with salsa and extra lime and Enjoy!
