1/2 c. red bell peppers seeded and chopped
1/2 c. green bell peppers seeded and chopped
1/2 c. red onion, peeled quartered and sliced thinly
1/2 c. celery, finely diced
1/2 cup carrot, peeled and shredded
1/2 c. cucumbers, peeled and diced
1/4 cup lime juice
2 tsp cumin, ground
1/4 c. cilantro, fresh and chopped
1 cup non fat mayo or non fat ricotta cheese
Can of Clams (50 oz or so) well drained
1 lb crab meat, drained
3 limes
6 avocado, pitted and halved
-In a large bowl, mix first 10 ingredients together well.
-Gently fold in the chopped clams and crabmeat.
-over and refrigerate for at least 1 hour to chill and allow flavors to develope.
-Scoop 1/2 cup of crab and clam salad into avocado half. Serve with the lime wedge.
