9 baby artichokes
12 red potatoes
juice of 2 lemons
6 6 oz Halibut Fillets
ground pepper to taste
3 tbsp olive oil
1 large leek, sliced lengthwise
4 scallions, thingly sliced
1/4 c. fresh parsley
2 tsp fresh garlic

Bring large pot of water to a boil. Add trimmed artichokes and red potatoes and bring to a boil with juice of one lemon. Cook about 20 min, until tender. When cool, cut potatioes into slices. Set aside.

Preheat grill, season halibut with pepper. Brush with evoo and grill fillets (can be sauted on stove top also)

Cooking time depends on thickness of fish. about 5 minutes per 1/2 inch thickness.

While Halibut is cooking, heat olive oil in large saute pan. Add Leeks and scallions. Stir in precooked artichokes and potatoes. Add lemon zest, lemon juice garlic and parsley. Saute until tender.

Use olive oil/leek/potato/artichoke mix to side grilled Halibut! 🙂
