1/4 cup flax oil
1 cup splenda
2 tbsp splenda brown sugar
2 tbsp sugar free syrup
3 large egg whites
3/4 cup upsweetened applesauce
1 tsp vanilla
1 1/2 cup oat flour
1 tsp baking powder
1/4 tsp baking soda
2 tsp cinnamon
1/2 tsp allspice
**optional: 1 cup sliced and cubed fresh apple

-Preheat oven to 350F degrees. Spray muffin tins with nonstick cooking spray (pam).

-In a large mixing bowl, stir together oil, splenda, syrup, egg whites, spplesauce,
and vanilla (add in sliced apples also, if using). Sift in the flour, baking powder, baking soda, and spices and stir until smooth. Spoon batter into prepared muffin tins.

-In a small bowl, combine 1 tbsp splenda, 2 tbsp splenda brown sugar, and 1/2 tsp cinnamon for the topping. Sprinkle with a spoon evenly over the top of each muffin.

-Bake for 20 minutes or until the center of the muffins are fully cooked.
