Ingredients:
10 oz. boneless skinless chicken breast (raw)
3/4 cup Grape Nut Cereal
1/2 cup egg whites
2 tbsp reduced fat parmesan cheese
1 small egg plant, cut NON lengthwise
2 oz. shredded fat-free mozzarella cheese
3/4 cup canned tomato sauce (i like using the can of stewed tomates)
-2 tbsp fresh minced garlic
-2 tbsp fresh basil,
-2 tbsp fresh oregano
pepper to taste

Directions:
Preheat oven to 375 degrees. Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Add parmesan and other seasonings (garlic, basil, oregano, pepper). Place crumbs in one small dish and Eggs in another. Next, pound your chicken so it’s sit flattened. Coat raw chicken on both sides with Eggs and then coat with crumb mixture. Do the same with the egg plant, coating with egg whites and placing in crumb mixture. First place egg plant on baking pan, sprayed with nonstick spray and then layer chicken on top of chicken and add tomato sauce with cheeses over top. Place in oven. Bake for 18-25 minutes, or until chicken is fully cooked.
