CrockPot Silva Chili

INGREDIENTS:
- 2 16-oz cans organic tomato sauce
-2 tbsp oregano
-5 tbsp chili powder
-2 tbsp cayenne pepper
-2 tbsp paprika
- 3 tbsp granulated garlic
-1 tbsp black pepper
-1 tbsp cumin
-1 pound ground turkey (93% or 99%)
-1 pound ground lean steak or chicken
-1 whole sweet onion, chopped
-2 green bell peppers, chopped
-1 can kidney beans, drained
-1 can pinto beans drained

DIRECTIONS:

Take meats and onion and sauté in pan. Place all other ingredients in crock pot, except beans. Once meat is cooked, add meat and onion sauté to the crockpot and cook for at least 4 hours on high. Add beans and cook for another hour on high. Serve and enjoy!

*Optional to serve with cheese of your choice. Almond Cheese is a GA Favorite.*

CROCK POT CHICKEN

Bloody Mary Crock-Pot Chicken

INGREDIENTS:
2 tablespoons extra virgin olive oil (EVOO)
1 small sweet potato, thinly sliced
1 cup celery, diced
1 yellow onion, chopped
4 cloves garlic, minced
1 Serrano Pepper, thinly sliced
1 cup Bloody Mary Mix
1/2 cup vodka (optional)
1 can crushed or diced fire-roasted tomatoes (28 ounces)
3 cups low sodium chicken broth
4 4-5 oz chicken breasts
Juice of 1 lime
A handful of cilantro, chopped

DIRECTIONS:
In a large crockpot, add all ingredients except lime juice and cilantro. Cook on Medium heat for 3-5 hours. Once fully cooked, top off with lime juice and cillantro and serve. For extra spice, add a few drops of Tabasco. Enjoy!!

Margarita Grilled Chicken

INGREDIENTS:
Juice of 2 limes
1 lime, sliced
2 shots tequila
2 cloves garlic, minced or pasted
1 small jalapeño
1 1/2 teaspoons cumin
1 1/2 teaspoons coriander
About 1/3 cup olive oil
4 4-5 oz chicken breasts
1/4 cup cilantro, chopped

DIRECTIONS:
Whisk the lime juice with the tequila, garlic, jalapeño (or Poblanno), cumin, coriander and olive oil in a large dish. Add the chicken to the marinade; cover or place in Ziploc bag. Place in the refrigerator to chill for 1-3 hours or better yet, overnight.

When ready to cook, heat outdoor grill to medium-high. Remove chicken from marinade and grill the chicken on each side, until fully cooked.

Top the chicken with chopped cilantro and squeeze of a lime and serve.

Simple Crockpot Lime Cilantro Chicken

Ingredients:

4 boneless, skinless chicken breasts

2 teaspoons olive oil

1/4 cup lime juice

1 tablespoon minced or chopped garlic

1/4 cup chopped fresh cilantro, packed

1/2 teaspoon ground black pepper

Directions:

Place all ingredients in crock pot and cook chicken on LOW for 6-8 hours or HIGH for 3-4 hours. Slice or shred chicken as desired and use on top of salad or your favorite veggies.

Crock Pot Turkey Taco Soup

Ingredients:

  • 1 pound 99 % lean ground turkey
  • 1 cup chopped onions
  • 1  can red kidney beans, drained and rinsed
  • 1 can Black beans
  • 1 cup salsa
  • 2 cups water
  • 2 14.5-ounce cans peeled and diced tomatoes
  • 1 4-ounce can diced green chilies (buy mild, if you want less kick!)
  • 2 tbsp salt free Fajita seasoning
  • 1/2 cup fat-free sour cream (optional)

Directions:

1. In a medium skillet, cook the ground turkey over medium heat until browned.  Set aside.
2. Place the ground meat, onion,  beans , salsa, water, diced tomatoes, green chile peppers, and fajita seasoning  in a crock pot. Mix to blend, and cook on Low setting for 8 hours.
3. Ladle into individual serving bowls, and top each with a tablespoon of fat-free sour cream, if you are using sour cream. Serve with brown rice, if your meal calls for carbs!

Crockpot lemon chicken

Ingredients:

  • 1 teaspoon dried oregano
  • 2 tbsp black pepper
  • 16 oz pounds skinless, boneless chicken breast halves
  • 1 tablespoon olive oil
  • 1/4 cup water
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons minced garlic
  • 1 teaspoon low-sodium chicken broth powder or bouillon granules OR 1/4 C. low sodium chicken broth
  • 1 tbsp chopped fresh parsley

Preparation:

Simply place all ingredients in crock pot and cook on low for 6-8 hours!!
Serve over a bed of brown rice or over a delicious salad!

Turkey & Tomato slow cook with a Kick!

Ingredients:

  • 1 pound extra-lean ground turkey (99% lean)
  • 1 cup chopped sweet onion
  • 2 cups finely chopped celery
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon ground cumin
  • 4 cups low-sodium chicken broth
  • 28-ounce can crushed tomatoes
  • 3 tablespoons ground chili powder
  • 2tbsp fresh minced garlic
  • 2 tbsp oregano
  • 2 teaspoon ground black pepper
  • 2 15-ounce cans kidney beans, drained and rinsed

Preparation:

  1. Add all ingredients to Crock pot–slow cooker set on low and allow to cook all day, minimum of 8 hours.
  2. you may reduce the slow cooker to LOW and keep the stew warm until ready to serve.

1 package 93% lean turkey breast
1 package 99% lean turkey breast
1lb Italian seasoned stewed tomatoes
1 can kidney beans
1 can garbanzo beans
2 tbsp minced garlic
2 tbsp garlic powder
2 tbsp Oregano
pepper to taste

Place all ingredients in Crock pot and allow to slow cook on low over night! Enjoy!
