-2 tbsp 0% Greek Yogurt
-1/2-1 tbsp chopped canned chipotle chile in adobo sauce (depending on hot you want the dish)
-1 pound imitation crab meat
-1/4 cup grated fresh Parmesan cheese
-1/4 cup grated rice topping (cheese substitute)
-2 tbsp finely chopped peeled jicama
-2 tbsp thinly sliced green onions
-2 tbsp finely chopped red bell pepper
-2 tbsp finely chopped fresh cilantro
-2 tbsp finely chopped celery
-1 medium avocado, peeled and diced
Optional for dipping
-Flax Chips OR Jicima OR Cucumbers OR Celery
-Preheat oven to 350°.
-In big mixing bowl, combine all ingredients except avocado and mix well until yogurt is evenly distributed among ingredients and everything is well mixed.
-Add mixture to baking dish and top off with diced avocado.
-Bake at 350° for 5 minutes to warm mixture and melt cheese.
-Remove and serve with flax chips, celery, jicima or cucumbers!
