3 Red Sweet Peppers – cut in tortilla chip size pieces
2 cup Low Fat or Non Fat Pepper Jack Cheese – shredded
15 oz Black Beans – drained and rinsed
1/4 cup onions
1/2 cup Salsa
1. Preheat broiler.
2. Place red peppers on a baking sheet, spread out to an even thickness.
3. Top with 1-cup cheese and place under broiler until cheese is melted.
4. Remove from oven, add black beans, onions, and top with remaining cheese.
5. Place back under broiler and cook until the newly added cheese has melted.
6. Remove from oven, spread salsa evenly over top of peppers.
7. Serve while warm.
