INGREDIENTS:
-1 packet Shirataki Noodles, drained
-1 tsp sesame oil
-1 tablespoons smooth natural peanut butter
-1 tsp fresh ginger, chopped
-red pepper flakes to taste (approx. 1/2 teaspoon)
-1 tsp garlic, minced
-1 tsp low sodium soy sauce
-1 tsp toasted sesame seeds
DIRECTIONS
1. Heat Shirataki Noodles in microwave until hot. Be sure to drain any excess liquid and set aside.
2. Combine all other ingredients, mix until peanut butter is dissolved.
3. Add sauce to drained noodles, toss until pasta is fully coated.
4. Sprinkle with toasted sesame seeds.
Enjoy warm or cold! 🙂

Just made this dish tonight, changed it up a lil. Added saute mushrooms and onions, chili paste and doubled the garlic!!
Very yummy and filling! One thing I would suggest to make it taste more like ‘thai’ is to add the noodles to the heated sauce and let simmer for 15 min on low, it helps soften the noodles…made double so I have plenty for lunch tomorrow 🙂
Glad you made it jess! Oh you used the KELP noodles, rather than the Shirataki… Makes sense why you should add those to the sauce and let them simmer to soften them up a bit. Glad you made it and great additions! The more garlic, the better! 🙂
