Mexican Fish Tacos!
4-6 4oz mahi mahi
1/3 cup cider vinegar
1/3 cup white vinegar
1/8-1/3 cup olive oil
1/3 cup fresh cilantro, chopped
6 cloves garlic, minced
juice of 1 lime
2 tablespoons cumin
1 tablespoon black peppercorns
1 tablespoon dried oregano
1 teaspoon saltMerinade Mahi for 30-60 min. Grill. Serve on red cabbage leaves + top with salsa, hot sauce or avocado. YUM!

Nikee, you can't go wrong with healthy fish tacos! I love your recipe!! Never tried them with the vinegar! I must try these! Sounds super healthy and simple! The vinegar must give it a little bit of a fish & chips flavor!
Fish Tacos usually have a cream sauce, which I always do without... BUT for a GA Fish Taco Cream Sauce, mix non fat or low fat Greek yogurt with a tsp of taco seasoning, juice of one whole lime and cilantro! Mix in a blender and you have yourself a yummy cream sauce!! :)

Another one of my top go-to Mexican-ish recipes:
Mex Egg Scramble
- 8 oz turkey
- 10-12 eggs
- 1/2- 1 tbsp cumin
- 1/2- 1 tbsp chili powder
- onions
- peppers
- 1/2 jalapeƱo
- garlic
- handful of cilantro
- 1-2 limesCook turkey and veggies to your liking. Mix in garlic & cook for 2-3 min. Add cilantro, cumin & chili powder. Add egg whites, cook to your liking. Add lime juice and serve. YUM!

Nikee, those tacos sound very very tasty! Yummy! I'll definitely have to try that marinade!
I think I've posted this before but here it is again since it is my absolute fave! So fresh, easy and flavorful!!
Pico de Gallo
2 roma tomatoes, chopped
1 very small red onion, chopped finely
1/2 jalapeno (seeds and membrane to desired heat), chopped very finely
2 T cilantro, chopped
sea saltMix all ingredients. Add salt to taste. Make sure to add enough salt since it definitely makes a difference in the flavor!
Put it on anything you want - eggs, fish, chicken...anything! Enjoy!

Delciious! Nikee, FYI, Costco is now selling a huge bag of cilantro!! I have been adding it to all of my meals and the freshness of this fresh herb makes all the difference in the world!! Thank you for sharing your recipe! Now with all this cilantro, I have another recipe to use it with!! Thanks girlie!

I think we should extend the Cinco De Mayo holiday throughout May! I love healthy Mexican dishes!!! So many people think Mexican is completely off limits but let us prove them wrong!! :)
