    Barbecue Rubbed Pork Chops

    Ingredients
    1 tablespoon Just Like Sugar or any sugar substitute
    1/2 teaspoon salt
    1 teaspoon paprika
    1 teaspoon chili powder
    3/4 teaspoon garlic powder
    3/4 teaspoon ground cumin
    1/4 teaspoon dry mustard
    1/8 teaspoon ground allspice
    1/8 teaspoon cayenne
    4 (6-ounce)pork chops, trimmed (I actually used 6 thin cut or "breakfast" chops)
    Cooking spray

    Combine first 9 ingredients; rub over both sides of pork. Heat broiler. Place on foil-lined pan sprayed with cooking spray and broil 2 minutes then turn over and broil 2 minutes more. Keep cooking until cooked through.

    I had this with Chef Stef's Cucumber and Cabbage Coleslaw. The flavors really compliment each other. TASTY!! I'm pretty sure this rub would also be very good on chicken.

    awesome... way to start the posing... Sounds delicious! as I mentioned, I am not much of a sauce or BBQ flavor girl but I am going to make this for Michael and give it a try! Delicious! I have all the spices too!! :) Thanks Erin!

    GINGER SOY LIME SHRIMP

    2 large shallots, peeled and chopped

    1 (2-inch) piece fresh ginger, peeled and chopped

    4 cloves garlic, smashed

    1/2 cup soy sauce

    1/2 cup fresh lime juice

    Couple of drops of stevia

    1/4 cup chopped green onions

    1/8 cup peanut oil

    1/4 teaspoon coarsely ground black pepper

    2 pounds large shrimp, shelled

    Directions

    Place shallots, ginger, garlic, soy, lime juice, and sugar in a blender and blend until smooth. Add the green onion and oil and blend until combined. Season with black pepper, to taste. Place shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.

    Preheat a grill to high. Remove shrimp from the marinade and grill for 1 1/2 to 2 minutes per side.

    EPIC FISH MEXICAN MERINADE

    This is one of my absolutely favorite marinades! You get a great lime and cilantro flavor without overpowering the flavor of the fish. This can also be used on chicken or beef, but seems to work best with white fish.

    INGREDIENTS:
    1/3 cup cider vinegar
    1/3 cup white vinegar
    1/8 cup olive oil (
    1/3 cup fresh cilantro, chopped
    6 cloves garlic, minced
    juice of 1 lime
    2 tablespoons cumin
    1 tablespoon black peppercorns
    1 tablespoon dried oregano
    1 teaspoon salt- optional

    PREPARATION:
    Combine all ingredients and mix well. Marinate fish for no longer than 90 minutes (marinate beef, lamb and pork for about 6 hours, poultry for 4 hours).

    Nikki, thanks, both of those recipes look delicious!! Here is part of my 2nd meal today.

    Eggs Burschetta

    Egg whites
    1 roma tomato
    1/4 cup basil
    1 clove garlic, roasted*
    Sea salt, optional

    I cook my egg whites like a pancake/pizza. Chop tomato and basil and mince garlic. Mix all together. Add sea salt if desired and place on top of egg whites. So easy and delicious. Of course if you can have olive oil, definitely drizzle that over the top.

    * To quickly roast garlic, remove cloves from bulb but leave skin on. Cook in a skillet over medium high heat till skin is browned in spots. Let cool and remove skin. Tasty!

    Maybe we can slowly start adding the old recipes this way, so we don't have to re/type, cut and paste, re tag, etc....

    This one was in Oxygen awhile back... I tweaked it abit

    CHICKEN TENDERS WITH BALSAMIC GLAZE

    Splash of EVOO or Pam

    12 oz chicken tenders

    Ground pepper

    1 tsp minced garlic

    3 tbsp balsamic vinegar

    10 drops of stevia

    ¼ cup low sodium chicken broth OR water

    Fresh parsley

    1. Heat oil or pam in med-high heat.

    2. Add chicken tenders and season with pepper. Cook, turning pieces halfway through, until cooked, approx 7 min. Remove chicken and set aside.

    3. Reduce heat to low, add garlic, and sauté. Then add vinegar, stevia, and chicken broth/water. Simmer, scraping bottom of pan for 1 min.

    4. Return chicken to pan. Mix all ingredients together and heat. Garnish and serve.

    ERIN INSPRIED SPICY ASIAN-ISH CHICKEN AND VEGGIES

    Cooked chicken
    Mushrooms
    Onions (can be green, white, or red...whichever you prefer)
    Asparagus
    Sugar Snap Beans
    Garlic

    Sauce:
    Equal Parts: Low Sodium Soy & Rice Vinegar
    Tsp- Tbsp of Chili Garlic Sauce (based on your spice preference)

    1. Pam sauté mushrooms, onions, asparagus, snap beans until soft
    2. Toss in cooked chicken for 2-3 min
    3. Toss in Garlic for 3-4 min
    4. In separate bowl, mix all ingredients for sauce
    5. Mix chicken/veggies with sauce
    6. Enjoy!

    Cinnamon Danish with Toasted Almonds and Caramel(A Frankenfood Concoction)

    So this was spawned off of the Chocolate Protein Cake recipe and I have to say that I'm very pleased with the result. I know it's not totally carb free but 1 T coconut flour only has 30 calories, 1 gram fat, 4 g carbs, 1 gram protein.

    3/4 scoop protein
    1 T coconut flour
    1/4 t baking soda
    1/8-1/4 t granulated stevia
    2 egg whites
    1 T applesauce
    2-4 Capella drops (cinnamon danish swirl)
    water
    1 T sliced almonds, lightly toasted
    1-2 T Walden Farms caramel dip

    Mix all together in a mug and microwave for 1-2 minutes. Remove and run knife around edge of cake. Empty onto plate. Cut in half. Heat desired amount of caramel dip and spread on top of cake then sprinkle almonds over. Yummy!

    seriously...??? wow, Erin, quite amazing delicacy, I must say!! Looks straight out of a french bakery! Remind me of the cream puffs my grandparents use to buy me when I was young! Amazing concoction! Thanks for posing and love that you are taking photos!

    Gina, it was certainly a tasty concoction, let me tell you! Thanks again for the caramel. ;-)

    I had the shrimp salad for meal 3 today! Here's a pic of it. Not the best quality since I took it at work but hey, it will have to do. It was very tasty. I think next time I would leave out the red wine vinegar. I also put it on top of some butterleaf lettuce. Yummy. Oh, by the way, I was already about 1/3 into it when I remembered to take a photo!! LOL!

    I think its an awsome idea!!!...This morning I was reading something and the Italian tricolore salad came to mind (mozzarella, tomatoe, avocado...)...so I made up my own version...is is GA Lifestyle approved?

    TRICOLORE SUMMER SALAD

    1 Cup Cottage Cheese (instead of mozzarella)
    1 Redbell Pepper cut in strips (instead of tomatoe...i m not a fan of tomatoes!lol)
    2 Fresh crunchy Celery Sticks
    1 Tablespoon Udo's Oil (or extra Virgin Olive oil...I loove Udo's!!)

    Decorate a plate with all the ingredients and dig that celery stick in the cottage cheese! lol...
    I should reallyb try it myself before posting it! but this is how it came to mind! lol

Thank you ladies for all your help in keeping this info concise! It is a consistent project to continually reorganize the site, as it grows and content grows... That is what I am working on!     Claudine, I'm so excited that you're doing this. It will be fantastic! Thanks for your work. Please add the pictures in to the ones that have pictures. :-) Like any good cookbook, the photos are the things that make you want to make the food! Maybe that should be our side project to make every item that doesn't have a photo!!!! LOL!!!!!!!
