Gina’s Famous Protein Zucchini Loaf
Ingredients:
-2 egg whites
-1/2 cup oatmeal
-1/2 cup zucchini, shredded
-1 scoop whey/casein blend Protein Powder (visit my favorites in my Amazon Store)
-1/4 cup water
-1 tsp baking powder
Directions:
Preheat oven to 350 degrees. Spray loaf pan well with non stick spray. Mix all ingredients in mixing bowl. Pour batter into loaf pan and place and into the oven for 30-35 minutes until golden brown and fully cooked, all the way through. Remove from oven and allow to cool before serving. Enjoy as is or slice into pieces, toast and add a touch of nut butter or jam!
Feel free to turn these into waffles or muffins too. 🙂

These are so easy and quick to make. I have a zucchini plant growing so I’ve made these so many times and tried some variations on it. My favorite is just add some raisins and a dash of nutmeg.
I am so glad you love these!! They are a huge favorite and I love that you can literally add anything to them to change the flavor and make them different. Adding a banana and walnuts is also a great variation. The options are endless!! I need to get my own zucchini garden too! 🙂 Keep up the great work and digging deep!!

Looks like this recipe is pretty famous indeed! What would you recommend to substitute the protein powder for? My OBGYN suggests I stay away from Protein powder during Pregnancy. Thank You!
Alice, try it without and see how it comes out, never tried it without protein powder… for this recipe. Let me know! You may need to add more sweetness since some comes from the protein powder. Feel free to add ground flaxseeds or almond meal and see how that turns out. Keep me posted! 😉

I’m a vegan and was wondering if you know of any alternatives for the eggs? I do know that unsweetened applea sauce is a common substitution, has anyone ever tried it? Do you think it’d hold up? Only one way to find out I suppose! Thanks for the great recipe!
