Gina’s Famous Protein Zucchini Loaf

Ingredients:
-3 egg whites
-1/2 cup oatmeal
-1/2 cup zucchini, shredded
-1 scoop vanilla protein powder
-1 tsp vanilla extract
-1 tsp baking powder
-touch of cinnamon
-2 packets Stevia (optional)

Directions:
Preheat oven to 350 degrees. Spray loaf pan well with non stick spray. Mix all ingredients in mixing bowl. Pour batter into loaf pan and place and into the oven for 30-35 minutes until golden brown and full cooked, all the way through. Remove from oven and allow to cool before serving. Enjoy as is or slice into pieces, toast and add a touch of nut butter or jam!

    These are so easy and quick to make. I have a zucchini plant growing so I’ve made these so many times and tried some variations on it. My favorite is just add some raisins and a dash of nutmeg.

    • I am so glad you love these!! They are a huge favorite and I love that you can literally add anything to them to change the flavor and make them different. Adding a banana and walnuts is also a great variation. The options are endless!! I need to get my own zucchini garden too! :) Keep up the great work and digging deep!!
