Almond Coconut Pancakes (no carbs!)

INGREDIENTS:
-2 egg whites
-1 oz of ground almonds (or you can use almond meal)
-1 scoop vanilla protein powder
-1 oz unsweetened shredded coconut
-2 tbsp water
-1 tsp baking powder
-cinnamon/Stevia to taste

*(optional toppings: almond butter and or sugar free syrup)

DIRECTIONS:
-Preheat pan sprayed with non stick spray (Coconut Spray works great for added coconut flavor)
-Mix all ingredients in a bowl.
-Pour pancake mix into pan and allow to cook on medium heat, nice and slow (approx 3 minutes on each side)
-Remove from pan and allow to cool
*Optional: top off with Nut butter and or Sugar Free Syrup

Beet Cauliflower Mashed

Ingredients
-1 Beet
-1 Head Cauliflower
-2 Cloves Fresh Garlic
-1 tsp sea salt

Directions:
Pure until creamy and enjoy! Nutritious and a Beautiful side to any lean protein!

Cinco De Mayo Style Deviled Eggs

Ingredients:

* 1 dozen eggs
* 1 ripe avocado
* juice of 1 lime
* 1 egg yolk
* 1 teaspoon Tabasco
* pepper, to taste
* Sprinkle of Paprika
* OPTIONAL: 1 tbsp non fat cottage cheese or Greek yogurt

Directions:

1- First hard boil the eggs. Fill up a large saucepan half-way with water and gently add the eggs. Cover the eggs with at least an inch of water. Bring the water to a boil. Cover, and remove from heat. Let sit covered for 12-15 minutes. Drain hot water from pan and run cold water over the eggs. Let sit in the cool water a few minutes, even adding ice to keep the water really cold. (This helps separate the shells from the egg white)

2- Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and dispose all but one. Arrange the egg white halves in dish or in egg carton to be transferred to dish after.

3- Using a fork, mash up the avocado, Tabasco, 1 egg yolk, pepper, lime and cottage cheese or Greek yogurt (if you are using it).

4- Spoon guacamole mixture into the egg white halves. Sprinkle with paprika.

Cinnamon No Carb French Toast

Ingredients:

-2 slices Julian Bakery Carb Zero Cinnamon Bread
-1 egg white
-1 whole egg
-1-s packets Stevia
-1 tsp cinnamon
-1 tsp vanilla extract
-2 tbsp unsweetened coconut or almond milk

Directions:

Place all ingredients but the bread in a bowl and whisk until mixed. Heat pan over stovetop with non stick spray. Place bread in egg mixture and coat well on both sides. Place soaked bread in pan and cook on medium heat until golden brown on both sides.

Enjoy plain or top off with a touch of sugar free syrup. For an extra special treat, top off with nut butter, sliced fruit and a touch of sugar free syrup.

Simple yet Tasty Kale Chips

INGREDIENTS:

-kale
-seasoning of your choice (sea salt, cayenne pepper, chipotle seasoning, italian seasoning, etc.)
-Extra Virgin Olive Oil (spray works great)

DIRECTIONS:

Take kale off the stems and lie on a baking sheet. Sprinkle EVOO or use EVOO spray to make it easy. Sprinkle with seasoning of your choice. Bake at 325-375 for 7-12 minutes till just brown on the edges. If desired, you can turn on broil for a few minutes to get extra crisp. Enjoy!!!

Berry Berry Breakfast Smoothie

INGREDIENTS:

-1 cup mixed berries (which ever mix you like)
-1/2 banana
-1/2 avocado
-1/4 cup Non Fat Greek yogurt
-1 scoop vanilla protein powder
-1 cup water (unsweetened coconut or almond milk optional)
-Probiotics
-1/2-1 cup ice cubes

DIRECTIONS:

Blend all ingredients. Pour into a cup and enjoy a very fruity, healthy breakfast smoothie.

Garlic Rainbow Chard

INGREDIENTS:

-1 large bunch rainbow chard, stems removed
-1/2 Red Bell Pepper, thinly sliced
-1/2 Yellow Bell Pepper, thinly sliced
-1/2 Green Bell Pepper, thinly sliced
-3 Tbsp olive oil
-3 large garlic cloves, thinly sliced
-pinch of Himalayan Salt
-Pepper to taste

DIRECTIONS:

Remove stems from chard and cut into 2-inch lengths.  Cut the leaves into 2-inch strips. In a sauté pan, heat the olive oil. Stir in the garlic and cook over moderately high heat until lightly golden. Add the bell peppers and continue to sauté until pepper are soft, about 4-6 minutes. Add chard leaves in large handfuls, allowing each batch to wilt slightly before adding more. Season the chard with salt and pepper and cook, sautéing, until the leaves are softened and most of the liquid has evaporated, about 8 minutes.

Enjoy along side any lean protein of your choice.

Garlic Pepper Cauliflower Mashed

INGREDIENTS:
-1 large head Yellow cauliflower
-4 cloves roasted garlic
-1/2 tsp Himalayan sea salt
-1/4 cup non fat Greek Yogurt
-1/2 red bell pepper, cut into pieces
-black pepper, to taste
-1 tbsp Extra Virgin Olive Oil
-low fat parmesan cheese (optional)

DIRECTIONS:
1. Boil cauliflower until soft when pierced with a fork. Drain and set aside to cool.
2. Place all ingredients in food processor and puree until creamy.
3. Remove from mixer and serve!

Makes a Great Starch (potato) substitute!!

Cauliflower Devil’d eggs

INGREDIENTS:
-1 head of white or yellow cauliflower
-1/4 c. fat free sour cream or Greek Yogurt
-1 tsp garlic salt
-1 tbsp Tabasco
-1 tbsp pepper
-1/4 c. spicy mustard
-1/2 tsp smoked paprika (or regular paprika)
-3 tbsp Parmesan cheese (optional)
-24 hard boiled eggs
-2 egg yolks

DIRECTIONS:
-Boil Eggs and allow to cool.  Remove shells, cut in half,  remove yolks and discard all but 2 yolks.

cauliflower stuffing…

-Boil cauliflower until when pierced with a fork, fork easily punctures cauliflower.
-Drain cauliflower and place into food processor
-Add all other ingredients (except paprika) and mix until creamy!
-Spoon cauliflower mix into egg white halves OR fill a plastic bag with cauliflower mixture, cut off corner and squeeze into egg halves. (as you would squeeze icing onto a cake.)
-Sprinkle paprika over top and refrigerate until ready to serve.

Top Spring Salad Dressings

Coconut and Basil Dressing
Ingredients
1/4 cup shredded coconut
1/4 cup extra virgin olive oil
1 sprig basil
1 stalk celery
1/2 teaspoon turmeric
1 tablespoon lime juice, fresh if possible
1 Stevia Packet (optional)
1 tablespoon of water, to thin as desired

Directions
In a blender, combine the coconut, olive oil, basil, celery, spices, lime juice and water. Blend well. Taste. Add Stevia, as desired, for sweetness. Blend well. Enjoy on your favorite salads or even in a stir fry.

Easy Mustard Vinaigrette
Ingredients
1 tablespoon extra virgin olive oil
1 tablespoon dijon mustard
1 tablespoon balsamic vinegar
pepper to taste

Directions
To prepare the dressing combine and whisk all ingredients or simply blend and enjoy!

Almond Dressing
Ingredients
1/4 cup natural almond butter
1/4 cup whole raw almonds
2 teaspoons Braggs Liquid aminos OR low sodium soy sauce
1 packet Stevia
1 Tablespoon fresh lemon or lime juice
1 clove garlic
1/4 teaspoon ginger, minced
1/4 cup filtered water

Directions
Place almond butter, almonds, Braggs or Soy Sauce, stevia, lemon juice, garlic, and ginger into a food processor or blender and blend. Slowly add up to ¼ cup of water to thin as desired.
Enjoy this dressing on a salad or as a Nut Sauce Dip!

Oil-Free Orange Vinaigrette Dressing
Ingredients
1/2 orange, peeled and sliced into quarters
½ avocado
3 tablespoons of Apple Cider Vinegar
1 packet Stevia
4-5 tablespoons water, to thin

Directions
Combine the orange, avocado, apple cider vinegar, stevia and water into a food processor or blender. Add water until you reach your desired consistency.

Avocado and Basil Dressing
Ingredients
1 avocado
½ cup of basil,
3 tablespoons of extra virgin olive oil
3 tablespoons of apple cider vinegar
1-2 packets of Stevia
1 cup of filtered water, to thin

Directions
Combine the avocado, basil, olive oil, apple cider vinegar, and Stevia to your food processor or blender and mix. Then add ½ cup of water and blend. Continue adding water up to 1 cup until until you reach your desired consistency. Toss in a serving with salad and enjoy!

Carrot Ginger Sunflower Dressing
Ingredients
4 medium carrots, chopped
1/4 cup sunflower seeds
2 tablespoons fresh ginger, peeled and chopped
1/2 cup apple cider vinegar
1 tablespoon Braggs Liquid Aminos or low sodium soy sauce
1/2 cups water
1 packet Stevia
pepper to taste

Directions
Place all ingredients into a blender and blend until smooth and creamy. Add Pepper to taste. Enjoy!
